Agourelaio

The green olive oil is being produced at a very early stage from the first unripe olives and it differs due to its unique features. It is distinguished for it vivid green color, its slightly bitter and spicy taste. The green olive oil (Agourelaio) contains all the vitamins, minerals and the highest levels of polyphenols of olive oil, which enriches it with exceptionaly high antioxidant levels.

Harvesting
Steeped in Tradition, picking the fruit from selected areas gently yet quickly so that the olives can be milled within hours requires precision, skill and timing. But the art lies in knowing when the fruit is at their perfect ripeness. Harvested too soon, and the olive oil is bitter. Too late, and the oil lacks depth of flavor.
Our Olives are selected carefully by hand and carried in baskets, never touching the soil and never coming in contact with anything that could compromise their taste. This ensures that our oil is produced only from protected, unblemished fruit at their height of sun-ripened perfection. This special oil maintains the highest standards of organic growing, and offers a rich taste, both of which reflect our sense of responsibility for our environment.
Milling
In line with local tradition, the olive trees are pruned intensively so that they regenerate and their crowns remain small and accessible. Due to the small plots and rugged terrain, the olives are not harvested by machine. the choicest fresh olives are hand-selected.
This superior cream of the olive, gathered at the peak of flavour before even the first pressing, is the rarest, most luxurius olive oil produced. Cold pressing at < 27°C is carried out the same day that olives are harvested.

Forest Farms extra virgin olive oil has excellent texture, taste and aroma and is produced by uniquely blending the Koroni, Korfoelia, Enetiko, and Thiako Koroni with local olive varieties. It is derived from the cold pressing of healthy olives and only by mechanical methods. It is a product of organic farming in conversion and it is available in 5 sizes:

Our History:
On the popular Ionian Island of Kefalonia, our organic estates are located just a short distance from the sea. Here, for centuries, the old noble families Foresti and Valsamaki have carefully cultivated their hand-selected olive trees.
The mild climate with gentle temperature variations, the unique local microclimate enhanced by the sea breeze, and the rare wild herbs that grow naturally around the groves create the ideal environment for our century-old olive trees to thrive. These trees produce olives of exceptional taste, wonderful aroma, and low acidity, making for a truly remarkable olive oil.
